See, feel, smell, listen and taste your way through the experience.

Look & Feel
The chocolate should have a glossy shine, this shows a good 'temper 'and be cool & dry to the touch Chocolate with a bloom is OK to eat but its appearance might affect your judgement of its taste

Smell
Yes - smell the chocolate. You could try rubbing your thumb on the chocolate to help release the aromas.

Sound
A good quality bar of chocolate should break with a crisp, ringing 'snap'.

Taste
Place a piece of the chocolate on your tongue and press it to the roof of your mouth. The chocolate should slowly begin to melt around your tongue. Move it around your mouth and think about the texture and the flavours. Then, when you are ready, swallow.

And ...

If you can still taste the chocolate long after it has left your mouth, then that's a sign of a VERY GOOD chocolate
